Research interests
My general research interest is the investigation of the relationship between diet and health with main focus on the effects of both dietary fats and fruits and vegetables bioactive components on chronic diseases risk. Specific interests include the impact of dietary saturated, unsaturated (MUFA and n-6 PUFA) fatty acids and flavonoids on vascular function, inflammation and lipoprotein metabolism.
Overview
Katerina Vafeiadou joined the University of Hertfordshire in August 2013. She is a senior lecturer in Nutrition in the School of Life and Medical Sciences and admissions tutor for the new course BSc(Hons) Nutrition. Katerina is a Registered Nutritionist and the module lead for 'Nutrition and Health 2', 'Food Service Management' and 'Work Experience in Nutrition' modules. She is also the placements tutor for Nutrition. Prior to joining the University of Hertfordshire Katerina worked for several years as a post-doctoral fellow in research projects that investigated the impact of dietary components on the prevention of inflammation and chronic diseases including cardiovascular disease.
